Or Larm (dry beef or pork stew with herbs) is a signature food of Luang Prabang province. This dish has been found in other parts of Laos as well. This is a real authentic dish of Laos.

Ingredients

Preparation

1. Roast red shallots, galangal slices, ginger slices, lemongrass, and chili until it become brown color and bring aroma.

2. Have a pot, add water. When the water is boiling, add the roasted ingredients into the pot, then add dry beef, round eggplants, long green beans, and Sakharn wood.

3. Boil for about 15 minutes.

4. Take out the chili, round eggplants, and red shallots to get pounded in a mortar. Then put them back to the pot.

5. Add the pounded Khaobeua mixed with a little bit of cold water and stir well.

6. Add wood-ear mushrooms, stir well.

7. Season with fermented fish sauce (padek) and a bit of salt. Stir well. Follow by adding fresh vegetables (as you like) and fresh dill of course.

8. Adjust the taste and serve in a bowl with sticky rice or steamed rice :) So Goooood :)
